Boxing Day is a big holiday here. Offices are open all day on Christmas Eve, but close tight on Boxing Day. The day is not about guys with puffy gloves beating each other up. It's about boxing up your extra Chhristmas food and giving it away.
Jim baked on Christmas Eve. Of course, he made a batch of his signature Scottish Shortbread. He also baked a two layer chocolate cake (Betty Crocker Devil's Food we found in Antigua) and customized it with candied cherries, walnuts, and raisins (Hi, Marsha!). So that is what we took to neighbors and landlord on Boxing Day. Don't worry -- we kept plenty for ourselves, too!
After delivering the goodies, we rode our bikes beyond the Martello Tower to Palmetto Point, and peeked at the Beach House hotel. The Sea was kind of rough there, so we backtracked to our favorite Pink Sand Beach to rest our legs and eat the lunch we'd packed. On the way, my legs needed frequent rest, so we collected a "plastic" [plastic grocery bag] full of coco plums. Not very tasty raw, but I hear they're good for jam and you can roast and eat the seeds, which are huge.
We figure we bicycled more than eleven miles. We slept very good that night! zzzzzzz
