<------ Mango jam with little slivers of lime zest.
Today we made mango jam and planted sugar cane. Pretty exotic, huh!
In March it was guava jam (too tough), April was papaya jam (too soft), and now it is mango season. The mango jam came out juuuust right. There are mangoes everywhere! They taste a little like peaches and have a bigger pit than a peach and are more stringy. Very delicious! I have also decided to "cheat" and use a cooking thermometer when making jam. Pectin is not available here, and without a thermometer you have to be verrry good to get the jam to gel correctly.
Sugar cane seems to grow well any time. Of the plants you see in America, it looks most like corn. It grows very fast up to about 10 feet high. Good to grow along your back fence if you're trying to hide a junk car in the neighbor's yard ; -)
